Early humans used stones to grind up wild seeds and then added water to make primitive dough for bread. Then, the ancients discovered that leaving the mixture open to the air overnight caused something miraculous to happen: the dough would rise, and gain flavour and texture. Adding a piece (known as the ‘mother’) to the next batch produced the same effect. Today, we make Mother Stone sourdough in this time-honoured way. Nothing is artificial, and nothing is rushed. We use simple, good ingredients, and then allow the dough to rise slowly and naturally without using commercial yeast. The way it always did before there were additives and industrial processing. It takes us approximately 72 hours to make each loaf, but it’s worth it. Mother Stone is rich with flavour, a feast for all the senses. It is as good for you now as it was back then.
